IntroductionQuite a bit lighter than the original!!! Quite a bit lighter than the original!!!
3 medium red potatoes (with or without peel)
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. salt
1 tbls. fresh minced parsley
1/2 tsp. pepper
1/4 cup diced celery
4 oz. fat free cream cheese
Add cream cheese and stir until melted. Makes about 3 1-cup servings.
*Hint* If the soup needs to be thicker, add instant mashed potatoes.
Omit the parsely and add ground rosemary.
For a heartier soup, you could add chopped up lean ham.
