Fluffy Sweet Potatoes

Introduction

A delicious addition to any meal or by itself. A delicious addition to any meal or by itself.
Number of Servings: 8

Ingredients

    4 carrots, peeled and cubed
    3 lb. sweet potatoes, peeled and cubed
    2 chicken bouillon cubes
    6 tbsp margarine or margarine substitute
    1/4 cup brown sugar
    2 tbsp fresh juice, in any flavor
    1 tsp pumpkin pie spice
    salt and pepper to taste
    Granola, for garnish

Directions

In stock pot place carrots, sweet potatoes, chicken bouillon cubes and cover with water.
Bring to a boil and simmer until vegetables are very tender about 20-25 minutes.
Drain leaving 1/3 cup of the cooking liquid.
Transfer to a blender or use hand mixer etc.
Add brown sugar, juice, pumpkin pie spice , salt and pepper. Whip until mixture is light and fluffy.
Serve or freeze in bags or casserole dish.
You can freeze for up to 6 months.
To cook after freezing thaw, preheat oven to 350*F, cover and bake for 35 to 40 minutes. After baking I turn it into a dessert and add granola for a little crunch on top!

    I used 1 cup more broth with my batch, and added 2 Tablespoons cool whip 'free' on top and served this as a dessert. My husband who hates vege's loved it! - 11/9/07

    I can see adding the carrots to the sweet potatoes, and I make mine with some chicken stock and spices and whip them,but I can't see adding the br. sugar - to me sweet potatoes have enough flavor & sweetness on their own plus the carrots will add some some sweetness and who needs the extra calories - 2/7/09

    Made this last night & we loved it! I suggest starting the carrots first though, as I used a mixer and had pcs of carrot- which was fine- if you care. Also, add more pie spice. This made WAY MORE than 8 servings! There was 4 of us last night, & we could eat this at least twice more to finish it. - 5/12/09

    This does sound good, but I think maybe you should remove the vegetarian tag. You can substitute with vegetable boullion (and most of us vegetarians know this), but as it is, chickens aren't vegetables. - 4/26/09

  • Since both carrots and sweet potatoes are high in natural sugars I am curious as to why the brown sugar is added. In addition the nutrition data does not list the grams of sugar in this dish. - 2/10/11

  • I like this! especially the carrots & bouillion. Never thought of Pumpkin spice. I use brown sugar Splenda for less calories and keep it no salt. A little nutmeg adds a good taste replacing the salt! - 2/10/11

  • Leave out the extra salt and use low-sodium chicken bullion to lower the sodium content. The bullion will still give it enough sodium to enhance the flavor. - 2/10/11
