1 cup Cashew Butter
1 cup Granulated Sugar
1 Egg, beaten
You can also use peanut or almond butter as well, but I prefer the sweetness of the cashews.
Mix all the ingredients together.
Roll dough into little 1" balls spacing them 2" apart.
Dip a fork in sugar and press cookies down twice to make a criss cross pattern.
Bake for 8-10 minutes at 350.
Serving Size: Makes 24 cookies
