1 cup mixed chopped vegetables (carrots, green pepper, onions, mushrooms, celery)
2 Tbsp. Lemon juice
2 Tbsp. White wine
1 tsp. Parsley, dried
Â½ tsp. Pepper (use Â¼ tsp. For a less spicy result)
Â¼ tsp. Oregano
Â¼ tsp. Paprika
2 (6 ounce) fish fillets such as orange roughy, flounder, or sole
1. Over medium high heat, saute vegetables in lemon juice and wine. When vegetables soften, add seasonings.
2. Place each fillet on a sheet of foil. Divide vegetable mixture and place on top of fish. Seal foil tightly. Bake 25 minutes.
