Tomato Garlic chicken.

Introduction

This is a chicken recipe I nabbed from my mother. Delicious, healthy, high in protein and nutrients. And, it's easy to make.

Amazing with whole wheat pasta, shirataki noodles, or spaghetti squash as well. Also goes well with a lush green salad.

Number of Servings: 1

Ingredients

    Chicken Breast cutlets (4 oz.)
    Tomato Paste (3 tablespoons to a can's worth depending on your tastes, or get the big jar, available at ethnic grocery stores)
    Olive oil
    Garlic (fresh or crushed)
    oregano
    basil
    sundried tomatoes (preferably bagged, jarred is alright...optional but DELICIOUS)
    salt to taste

Tips

You can always double or triple (or quadruple) these recipes. Also, add as much or as little garlic as you want. I am a garlic fiend, so I ten dto use more.

ALSO, when looking for jarred garlic, make sure it is free of oils and excess preservatives and salts (I like Trader Joe's brand) And make sure your tomato paste has no added salts or preservatives if possible.

Also, feel free to use Turkey breasts, or a meat subsitute if you'd like. The tomato mixture is also terrific when spread over vegetables before baking them. YUM!


Directions

Preheat oven to 350

Mix everything up, and rub it over the chicken breasts. It tastes good when you dip that into Panko, or whole wheat bread crumbs as well (NoteL this will add some extra calories and carbs)

Grease a pan either with spray, a teensy bit of coconut oil, or olive oil. You won't need too much.

Bake for 20-45 minutes (depending on how many you make, your oven, etc., just make sure it's done! )


Serving Size: 1 Serving (if it is too much, you got awesome leftovers, or filling for a breakfast omlette)
