Ingredients

1/3 Cup flour
1 tsp Baking Powder
3 eggs, separated
1/2 Cup brown sugar
1/2 tsp Salt
1 Cup chopped, pitted dates
1/3 Cup pecans, finely chopped

Directions
Prepare pan: Line bottom of a 9-inch springform pan, with parchment or baking paper, then grease and flour entire pan (including paper).
Combine flour and baking powder and set aside.
Beat egg whites and salt until stiff, set aside.
Beat egg yolks until smooth, then beat in brown sugar until thick. Add flour mixture and continue mixing.
Stir in dates and pecans. Do not overmix!
Gently fold egg whites into batter, until just combined.
Pour into prepared pan and bake at 350 for 25-35 minutes, until toothpick inserted 2" from sides comes out clean. Cool in pan; center will sink slightly when cooling.
