2 lg egg

if you would like an original omelet, sub 1/8tsp salt for the cheese.
Add butter to skillet. When butter is melted, add egg mixture to skillet; lower heat to medium. Immediately begin stirring egg mixture gently but continuously with a spatula until mixture resembles small pieces of cooked egg surrounded by a liquid egg. Stop stirring. Cook 30-60 seconds more or until egg is set.
Spoon cheese across the center. With the spatula lift and fold an edge of the omelet about a third of the way toward the center. Remove from heat. Fold the opposite edge toward the center; transfer to a warm plate.
