CHICKEN AND SPINACH TIMBALES

Introduction

Ingredients

    1 c cooked chicken
    8 oz frozen chopped spinach, cooked and squeezed dry
    1/4 c finely chopped onion
    1 large egg
    1/2 c heavy whipping cream
    Dash each of salt and pepper

Directions

Run cooked chicken, spinach and onion through a food processor until finely chopped. Put in lightly greased custard cups.

Lightly beat egg, cream, salt and pepper. Pour over the chicken and spinach. Shake the cups to get the custard mixture down through the chicken and spinach.

Set the filled custard cups in a baking dish and put it on an oven rack. Fill the baking dish with hot water about half way up the cups.

Bake at 325 until set. Remove from oven, being careful not to slosh the hot water into the custards or onto you. Remove the cups from the hot water and gently tip the the timbales out.

Serve with sauce if desired.
