Goat Cheese Wontons, Clean Living

Ingredients

    6 oz (1/2 pack) wonton wrappers

    Filling:
    4 oz goat cheese
    1 cup cooked quinoa
    1 TB basil, chopped
    1/4 tsp crushed red pepper
    3 cloves garlic, crushed

    olive oil cooking spray
    additional parmesean cheese

    Sauce:
    1/2 Cup roasted red peppers
    1/4 Cup fresh parmesean cheese
    2 TB basil
    6 cloves garlic, crushed
    1/2 tsp sea salt
    1/4 tsp pepper

Tips

Watch carefully during the last few minutes so they don't over-crisp or burn.

The recipe calls for fat free greek yogurt but there is no listing for it (as of 3/6/12).


Directions

Filling:
Combine goat cheese, quinoa, 1 Tb basil, crushed red pepper, and 3 cloves garlic.

Place 1/2 Tb filling in center of each won ton wrapper. Fold over sealing edges with little water or egg white.

Spray tops with olive oil. Sprinkle parmesean cheese on tops.

Bake at 400 degrees 8 - 10 minutes

Sauce: Bleand remaining ingredients. Serve on the side of warm won tons.
