6 Tbsp. margarine, melted (can use light margarine)
1 1/2 cups graham cracker crumbs (can use reduced fat margarine)
2 envelopes unflavored gelatin
1/2 cup cold water
2 (8 oz.) Neufchatel cream cheese
2 cups (1%) cottage cheese
1 cup sugar
1 (8 oz.) container reduced-fat non-dairy whipped topping
1 1/2 tsps. vanilla
1 can reduced sugar cherry pie filling
Sprinkle gelatin over water
Combine cream cheese, cottage cheese, sugar and vanilla to food processor or blender-process until well blended. Fold in whipped topping. Pour into prepared crust. Refrigerate 4 hours or until set.
Loosen cake from rim of pan. Remove side of pan from cake. Chill before serving. Serve with 1/3 cup chilled reduced cherry pie filling.
