1 Red Pepper
3 cloves minced garlic
9 oz lentils
4 cups vegetable broth
Add peppers and garlic and simmer until soft.
Add remainder of stock and lentils and bring back to the boil.
Bring down to a simmer until lentils are cooked through.
Serving Size: Makes 6 1 cup servings
