Grilled Steelhead with Herbed Aparagus and Zucchini

Introduction

I had a ton of asparagus from .99 a lb deals and so I developed this recipe to use of some of the bounty. I had a ton of asparagus from .99 a lb deals and so I developed this recipe to use of some of the bounty.
Number of Servings: 4

Ingredients

    16 oz Steelhead
    2 cups asparagus cut into 1" pieces
    1 cup zucchini, sliced thinly
    1 tsp fresh basil, chopped
    2 cloves garlic (large, minced)
    1 tsp lemon juice
    salt to taste
    pepper (fresh ground)
    1-2 tsp olive oil

Directions

Mince the garlic.

Heat 1 or 2 teaspoons olive oil in skillet on medium-low heat, add minced garlic. Cook until garlic turns golden brown, about 3-5 minutes.

Increase the heat to medium-high and add the asparagus and basil (you can use dry or fresh) and
Cook for about 5 minutes, then add the zucchini.

Cook until asparagus is fork tender, but still has a crunch, about 10-15 minutes.

Add fresh pepper to taste

Serving Size: Approx 1 - 1/2 cups
