4 C water
2 C quinoa
1/4 tsp salt
1 lb, asparagus, chopped to 3 inches in length
2 bunches green onions, chopped in 1/2" slices
2 T extra virgin olive oil
1 T thyme, dried or 1/2 C fresh
juice of one large lemon
8 oz, low fat feta cheese
salt pepper to taste
Add salsa or garlic powder if you like a bit more flavor.
While quinoa is cooking, add one T extra virgin oliv oil to large skillet and cook green onions for 3 minutes. Add asparagus and cook for 5 minutes. Add 1 Tbsp water to pan and cook for an additional 5 minutes. Remove from heat and add quinoa, thyme, feta cheese, lemon juice and additional Tbsp of olive oil. Salt and pepper to taste.
Serving Size: kes 8 1 cup servings at leass than 200 calories each if you use low fat feta cheese
