BBC Risotto

Introduction

Risotto with Broccoli and Cheddar Cheese, over black beans Risotto with Broccoli and Cheddar Cheese, over black beans
Number of Servings: 4

Ingredients

    1 cup Arborio Rice
    2.5 cups water
    1 bunch broccoli, chopped
    1 cup cheddar cheese, cubed
    2 tsp. Better than Boullion, Vegetable
    One can black beans
    Salt to taste

Directions

Cook rice and water on high until hot enough to bubble, then reduce to medium low to reduce. While reducing, chop broccoli and cheddar, and open can of beans. Warm the beans in small skillet or saucepan, with 1 teaspoon of the boullion. Add second teaspoon boullion to the rice. When rice is nearly cooked, add cheddar and broccoli, and stir. Remove from heat. Serve large spoonful of beans as a base, and a larger ladle of risotto over top.

Serving Size: Serves 4 as main dish, or more as a side dish
