Guilt free angel hair pasta with Creamy Marinara

Ingredients

1 package Tofu Shirataki noodles (8oz)
1/4 c marinara (try to find one about 50 cal per 1/2c serving)
1 wedge Garlic Laughing Cow Light cheese
1 t Reduced fat Parmesan cheese
Tips
You can change this up by experimenting with Laughing Cow flavors or sprinkling with extra spices (I often use garlic powder). You could even add more nutrition & bulk by adding veggies. You may need to add more sauce though...
Directions
Use a strainer to rinse and drain shirataki noodles well. Pat dry. In a microwave-safe bowl, microwave for 1 minute. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit, using kitchen shears or a knife. You can also pan fry them, stirring to keep from sticking. Be very careful to make sure the noodles are as dry as possible or the sauce will be watery.
Break the Laughing Cow wedge in the marinara & microwave for about 30-60 sec until cheese is melted. Mix well & add to the pasta. Microwave or heat in the pan (if you pan fried the noodles) until everything is as hot as you like. Sprinkle with Parmesan cheese & enjoy!
