Our Sun-Up Egg Squares

Introduction

It is our tradition to have this dish for Yule breakfast. It is our tradition to have this dish for Yule breakfast.
Number of Servings: 12

Ingredients

    1 pound pork sausage, cooked & drained
    1 1/4 cups Bisquick
    4 med potatoes, diced and cooked soft
    12 eggs
    1/2 cup sliced green onions (optional) - not calculated
    1 cup milk
    2 medium tomatoes, chopped (optional) - not calculated
    1 1/2 teaspoon salt
    2 cups Cheddar cheese, shredded
    1/2 teaspoon each; pepper, salt

Directions

Layer the sausage, potatoes, onions, tomatoes, and cheese in a well greased 13"x9"x2" baking dish. Beat together the remaining ingredients in a non-metal bowl and pour over sausage mixture. Bake, covered, in a 350 degree oven until golden brown and set (about 60 minutes, remove foil for last 15). Cut into 12 3-inch squares. Serves 12; can be halved, though we normally double it.
