Ingredients

    1 tsp olive oil
    1 6-inch whole-wheat pita
    1/4 cup canned, diced tomatoes
    1 basil leaf
    1/4 cup torn fresh spinach leaves
    1/4 cup roasted red peppers
    1/4 cup shredded part-skim mozzarella

Directions

Drizzle olive oil over pita. Mix tomatoes and basil and spread over pita. Add spinach leaves. Layer peppers over the spinach and top with mozzarella. Broil 4 minutes or until cheese melts.

  • I broiled one side of the pita for a few min.Turned and topped the pizza as suggested except for the basil which I jullianed several leaves and sprinkled oner the pie at the end of the cooking time...Chef Jim - 5/15/09

  • a similar recipe is in the Sugar busters cookbook--I cut the pita in 1/2 so I have 2 thin circles & use turkey pepperoni & sometimes a teaspoon of store-bought pizza sauce--you need to brush a thin coat od olive oil on all of the pita of the bread doesn't crisp up good enough. Love this. - 5/15/09

  • What a great idea for getting rid of the pizza craving. Didn't have all the ingredients so used tomato puree instead of chopped tomatoes and left out the olive oil. Such a quick and easy snack to make, my husband and I both loved this - 3/23/09

  • I love this recipe! This is a great idea - however I calculated the calories using kraft 2% milk mozarella cheese & the calories were 317.1 w/ 8.6 grams fat. Still a good choice & takes away the pizza craving. This will surely become a regular item in my menu! - 3/18/09

  • Excellent recipe! I added some diced onion to mine and it was great. That only thing I have to try is toasting the pita before cooking....it was a bit of a soft crust and I wanna get a crunchier crust....excellent tho! Thanks for sharing this recipe - 7/22/08

  • I LOVE this recipe. After having it for lunch/dinner, I don't crave other foods. It is delicious, inexpensive to make, and satisfying. I am even altering it to include various veggies and other types of cheeses. I have even used whole wheat wraps and they get crunchy in the oven. - 6/1/08
