Mashed Potatoes

Mashed Potatoes

Number of Servings: 5

Ingredients

    Yukon Gold Potatoes, 5
    Earth Balance butter, 1 tbsp
    Water from potatoes, .5c
    salt 1 tsp or to taste
    Parsley ( for color)

Directions

Cook potatoes over high heat for 30-40 minutes or until soft.
Save .5 c of potato water for later. Drain potatoes and put into a bowl. Add butter, water, and salt and mix with a mixer until smooth. Stir in the cut up parsley.

Serving Size: 5 cup servings
