Vegan Lettuce Wraps

Introduction

This is a great appetizer or simple meal. Very filling and very low calorie! Add some brown rice or other veggies if you like. This is a great appetizer or simple meal. Very filling and very low calorie! Add some brown rice or other veggies if you like.

Ingredients

    Carrots, raw, 1 large
    Broccoli, fresh, 1 spear (about 5" long)
    Mushrooms, fresh, .5 cup, pieces or slices
    Onions, raw, .5 cup, chopped
    Cabbage, red, fresh, .25 head, small (4" dia)
    Green Beans (snap), .5 cup
    Olive Oil, 2 tbsp
    *Kikkoman Stir-fry Sauce, 2 tbsp
    Iceberg Lettuce, 4 leaves, large

Directions

Chop all veggies. Add 2 tbsp olive oil to wok. Turn heat on high. Add onions to hot oil, cooking 1 minute. Add other veggies, stir, and cover for 1 minute. Repeat until veggies are desired texture. Add stir fry sauce or other sauce of your choice, cook 30 seconds more, stiring to coat veggies with sauce. Pour into bowl and serve with lettuce leaves.

    This is a great recipe. The only thing is that iceberg lettuce really doesn't have much nutritional value. Substituting Romaine or Boston lettuce would be a better choice. - 1/16/08
