Introduction

Fun and tasty buffet food. A nice mixture of summer squash and extra lean ground turkey. Just explain to people it's turkey or they may think it's pale and undercooked. Fun and tasty buffet food. A nice mixture of summer squash and extra lean ground turkey. Just explain to people it's turkey or they may think it's pale and undercooked.
Number of Servings: 16

Ingredients

    2 pkg. of extra lean ground turkey (40 oz.)
    2 large summers squash, chopped with skin (3 cups?)
    3/4 cup chopped sweet onion
    1/3 cup chopped sweet red pepper (optional)
    4 slices light five grain bread, chopped to bread crumbs
    1 1/2 teaspoons seasoned salt

Tips

A glaze with catsup and a bit of brown sugar can be added the last few minutes of baking. Glaze NOT included in nutrition calculations here.


Directions

Put ground turkey in large mixing bowl. Chop up other ingredients with food processor/chopper. Mix everything. Spray 9x13 glass cake pan with pan spray. Press mixture into pan. Bake at 375 degree for about an hour or until well done.

Serving Size: Makes 16 servings (1/16th of 9x13 pan)
