Whole wheat pasta salad with Extra Virgin Olive Oil Mayonnaise

    Barilla Whole Grain Rotini, 2 oz (56g-about 1/7 box), 14 oz
    Organic Olive Oil Mayonnaise - serving size 1 tablespoon, 28 serving
    Peppers, sweet, red, fresh, 3/4 cup, chopped
    Onions, raw, .5 cup, chopped
    Pickles - Kitchen Kettle Village Sweet Pickle Chips - 3 s..., 4 oz
    Annie's Naturals Organic Dijon Mustard, 1 tsp, 2.3 serving
    Pepper, black, .25 tsp
    stevia extract powder, 1 serving (optional)


Freeze ahead of time one large sweet red bell pepper. After it's frozen hard, remove from the freezer and run under hot water. The skin will peel off easily, making nice pimentos.
Cook pasta according to package directions. Cool.
Mix Mayonnaise, mustard, black pepper, chopped pickles, chopped peppers and onions, and stevia. Mix well with cooled pasta. Refrigerate for 30 minutes or over night before serving.
