Gingered Pineapple Cranberry Chutney

Introduction

I developed this to go with Black Bean Patties. Since craisins and crystalized ginger do have sugar, this recipe is not quite Daniel Fast legal, but close. I guess you could substitute fresh/frozen cranberries and fresh ginger. I developed this to go with Black Bean Patties. Number of Servings: 4

Ingredients

    2 medium apples, peeled and chopped
    2 seedless clementines, peeled and sectioned
    1/2 cup craisins, if you can find unsweetened, use them
    2 or 3 pieces crystalized ginger
    1/2 lemon, slices very thin then cut in quarters

Directions

Place all ingredients in a medium sauce pan on medium heat and stir occasionally. Cover and simmer on very low for another 20 minutes or until your main dish is done.

Serving Size: Makes 4 appoximately 1/2 cup servings
