Apple Cranberry Walnut Baked Oatmeal

Ingredients

    2 medium apples, sliced
    1/2 cup dried cranberries
    1/4 cup walnuts
    1 cups 1% milk
    1 1/2 cup nonfat plain Greek yogurt
    1 egg
    1/4 cup brown sugar
    2 cups oatmeal
    1/2 teaspoon baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1 teaspoon ground ginger
    1/4 teaspoon cinnamon
    1/4 teaspoon nutmeg

Tips

Serve with milk (not included in nutritional facts).


Directions

1. Preheat oven to 350 degrees.

2. Place apple slices, cranberries, and walnuts in bottom of an 8x8 baking dish that has been coated with cooking spray.

3. Mix milk, yogurt, eggs, and brown sugar together in a bowl. In a different bowl, mix oatmeal, baking powder, baking soda, slat, ginger, cinnamon, and nutmeg. Combine wet and dry mixture until well-mixed. Pour this mixture over apple/cranberry/walnut mixture in the baking dish.

4. Cover dish with foil and bake for 20 minutes. Remove foil and bake another 20 minutes or until oatmeal is golden brown.
