1 cup salted butter
1 1/4 cup packed brown sugar
1/3 cup smooth peanut butter
2 tsp. vanilla extract
2 tbs. organic blue agave sweetener
1 cup all purpose flour
1 cup whole wheat flour
1 cup quinoa flour
1/3 cup ground flax seed
1/2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. salt
2 cups dry steel cut oats
2 cups semi sweet chocolate morsels
I usually smoosh the cookies down with a spatula right when I take them out of the oven to make them more flat. Chocolate can be substituted for dark chocolate or dried fruit.
In another large bowl, combine whole wheat and all purpose flours, quinoa, flax seed, baking soda, cinnamon, and salt until well combined.
Gradually add dry ingredients to the butter mixture, beating well after each addition.
Stir in oats and chocolate morsels until well combined.
Bake at 350 degrees for 15-20 minutes.
