1/2 c. EggBeaters
1/2 c. frozen red peppers
1/4 c. frozen onions
2 tsp. Penzey's Northwoods Seasoning
1/4 c. shredded fat-free cheddar cheese
Add frozen peppers and onions mix. Microwave for 2 minutes. Blot veggies.
Add EggBeaters and Northwoods seasoning. Stir, and microwave for 1 minute. Stir again, and microwave for another 30 seconds.
Sprinkle cheese on top of eggs and microwave for 45 minutes. Let stand 30 seconds to cool.
