Stepmomster's Kale, Sausage and Potato FrittataSubmitted by: STEPMOMSTER
1 bunch of Kale torn with ribs removed
1 medium Potato (cubed)
1/2 cup chopped Onion
1/4 cup of 2% milk
2 oz Jimmy Dean- Hot Sausage (COOKED with fat drained!)
3 oz Shredded Parmesan Cheese
Add 1 tablespoon of olive oil to a 10 inch oven safe pan
Add onions and potatoes and cook over stovetop until almost done
Add Kale when onion and potatoes only need another couple of minutes
Add salt, pepper and garlic powder (to your liking)
Wisk eggs and milk together and then add cheese, again whisking until combined
Once Kale has wilted and onion and potatoes are done add cooked sausage to the pan.
Finally pour the egg mixture on top.
Continue to cook on stove top for 2 minutes until bottom has formed.
Place pan into preheated oven at 400 degrees
Bake for 7-11 minutes until frittata is golden brown and a knife placed in center comes out clean.
