Introduction

Italian style sunday soup Italian style sunday soup
Number of Servings: 6

Ingredients

    1.5 lbs of italian sausage
    2 bunches of baby spinach
    1 diced onion
    .25 cup minced onion
    4 cups of chicken stock (broth can be used, stock makes a richer soup)

Directions

Remove casings and brown sausage. Drain. Add broth, tomatoes, and pasta; bring to a boil. Cover, lower heat, and simmer for 20 minutes. Remove from heat, ladle into bowls. Stir spinach into bowl and let wilt. Best served with crusty artisan bread.

Also good with grated cheese, if you have calories/fat to spare for the day.
