Introduction

This is a great easy breakfast that is very impressive when you have guests. Serve with fresh fruit and it makes a beautiful breakfast. This is a great easy breakfast that is very impressive when you have guests. Serve with fresh fruit and it makes a beautiful breakfast.
Number of Servings: 8

Ingredients

    12 large eggs, beaten
    1 bell pepper, sliced
    1 onion sliced
    1 clove garlic
    1/2 tsp Italian seasoning
    1/2 c feta cheese
    1 cup spinach

Directions

Saute bell pepper, onion, garlic, italian seasoning until vegetables are soft. Spread evenly accross bottom of skillet. Sprinkle Feta cheese on top. Layer with spinach. Top with beaten eggs. Cover Skillet and cook on low heat until eggs are cooked through.

Serving Size: 8 slices - cut like a pie
