Healthy dosa or Indian spicy pancakes

Introduction

We purchased this healthy brown rice medley from Trader joes, with radish seeds and barley. My DH did not like the taste and to not let the product go to waste, I tried making spicy idlies as side dish ( which came out fantastic, btw - will post the recipe soon) and this dosa. This dosa tastes awesome if prepared like uttapam or you can also drop all the other ingredients in the batter and make dosas. Ingredients

    *Rice - Trader Joe's Brown Rice Medley 0.5 cup
    Split Black Gram (Urad Dal) Laxmi brand, .25 cup
    Split chick peas (chana dal), 1.5 oz
    Cream of wheat or soji 50 grams
    Cabbage, fresh, 0.5 cup, chopped
    Onions, raw, .25 cup, chopped
    *Peppers, hot chili, green, raw; 1 (45g), 3 serving
    Cashew pieces. (Optional - not in the nutrition data)
    Canola Oil spray ( already in the nutrition data)


Tips

If the dosa sticks, stir in a little whole wheat or wheat flour for binding.


Directions

Soak Rice Medley for 6- 8 hours with urad and channa dals. blend very smoothly with a little bit of Hot water. Let it sit in your oven overnight for 8 hours. The next morning add the rest of the ingredients and make dosa or pancake by spraying the pan for grease with Canola oil spray. Serve with coconut chutney or pre-made dry chutney mixed with a little Olive oil.

Serving Size: 12 servings of about 2 per person.
