Ground Chuck Spinach Meatloaf

Ingredients

    1 lb ground chuck
    2 large eggs
    3/4 Oats
    2 oz Spinach, fresh, chopped
    1/2 c Onions, raw
    5 Garlic cloves
    2 tbsp ketcup
    2 tbsp mesquite bbq sauce
    1 tbs Dijon Mustard
    *2 tsp Italian Seasoning
    1 tsp Kosher salt
    1/2 tsp Black Pepper
    3/4 c water

Directions

Preheat oven to 350 degrees.
In large bowl, mix eggs and water, add oats and let soak for 5 minutes. Combine the ketcup and bbq sauce in small bowl and set aside.
Chop onions, garlic and spinach. Add all ingredients except ketcup and bbq sauce to egg/oats mixture and blend well. Put mixture into standard bread pan. Spread the ketcup/bbq sauce mixture on the top of meat. Put into preheated oven and bake for 60 minutes. Take out of oven and let rest for 10 minutes before serving.
