Amanda's Banana Bread

Introduction

This bread is delicious for breakfast or as a snack. With the addition of flaxseed, it is especially good for you. It is a little high on fat and calories because it is made with real butter, but I don't use margarine since it is not good for you. You can substitute margarine or 1/2 C shortening for the butter. Number of Servings: 12

Ingredients

    1-1/2 C sugar
    1 stick butter, salted
    2 eggs
    1 tsp vanilla
    1/4 C fat-free buttermilk
    1 C 100% whole wheat flour
    1 C all purpose flour
    2 Tbsp flaxseed
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 C bananas, mashed

Directions

Mix all ingredients until smooth. Pour into greased and floured loaf pan or 24 muffin cups. Bake @350 in a preheated oven for 50-60 minutes for loaf or about 25 minutes for muffins.

Makes 1 loaf or 24 muffins

1 slice of loaf or 2 muffins = 1 serving
