Parmesan pasta

Submitted by: KASPARR

Introduction

A two-dish meal that's almost as easy as spaghetti! A two-dish meal that's almost as easy as spaghetti!
Number of Servings: 3

Ingredients

    1 pinch of salt
1 tiny splash of olive oil
    8 oz. pasta
    3 tbsp. parmesan cheese
    2 tbsp. soy-based buttery spread

    1 tiny splash olive oil
1 red bell pepper, sliced into strips
    1 cup broccoli
.5 cup peas, fresh or frozen

    Optional:
    Added salt, pepper, Italian-type-seasonings

Directions

Set large pan of water to boil, adding salt and a little olive oil. When boiling, reduce heat and add pasta; return to a boil, then set the temperature to medium-low. Cover and allow to simmer about 8 to 10 minutes, or until pasta is al dente. Strain, toss hot pasta with the butter, and leave in the colander in the sink to allow excess butter to drain out. Add parmesan and mix together.

At the same time, toss frying pan with a little olive oil and set on medium-high heat. Add sliced bell peppers and broccoli; allow to cook, stirring often. Add peas and cook additional five minutes. Mix in optional seasonings, if desired. Combine with pasta and serve!
