Moist Ritz Cracker Chicken (with greek yogurt)

Introduction

Very moist and savory chicken with ritz cracker topping and greek yogurt (which you will never taste). Easy to make and eat. Kid friendly, smells really good in your house! Was surprised to see that a lot of ritz cracker chicken recipes add cheese (which I like as well) and do not use light butter or mix the butter with crackers before applying them. So here is my family's take. Very moist and savory chicken with ritz cracker topping and greek yogurt (which you will never taste). Easy to make and eat. Kid friendly, smells really good in your house! Number of Servings: 6

Ingredients

    * Chicken Breast, no skin, about 2.5 lbs
    * Oikos Organic Greek Yogurt, Plain, 3-4 oz
    * Nabisco Ritz Crackers (about 1 sleeve)
    * *Smart Balance Light Buttery Spread with Flax Oil, 4 tbsp (
    Oregano, ground, 1 tbsp (KEY ingredient) Play with the amount, but do not forget it.

Tips

Can substitute greek yogurt with sour cream, but I find the yogurt to be creamier and less calories. Can also substitute with cream of chicken, but I would suggest using less of it. Adding sliced carrots to the pan or other such vegtables is good, but it could change the timing


Directions

Cut chicken into small slices, lay in casserole pan. Smear with greek yogurt, and you may add pepper. In a bowl smash up ritz crackers. Heat up butter or buttery spread till melted. Add butter to crackers and stir till all crackers are moist. Add oregano, and any other spices to crackers. Crumble over chicken. Bake (covered) at 350. Time will depend on the thickness of chicken slices. About 10 minutes (or earlier if you like depending on your oven) before finished, remove tin foil and bake until finished.

Serving Size: Makes 6 generous helpings. Divide reg. casserole pan to 6 areas.
