warm chickpea salad

Ingredients

    1.5 c. chickpeas (1 can)
    6 oz. jar marinated artichoke hearts
    5tbsp. olive oil
    1/3 c. almonds with skin, chopped
    Juice of one lemon
    2 Tsp. basil
    1 tsp. oregano
    2 tsp parsley
    salt & pepper

Directions

Heat 1 tbps. oil in large fry pan. Add chickpeas & cook over med. heat stirring often, til brown, appx. 10 min. remove to bowl. Add 1 tbps. oil to pan. Saute artichoke hearts til brown, 5-10 mins. remove to bowl. In separate bowl, whisk together remaining oil and spices and pour over chickpea mixture. Toss to coat, sprinkle with chopped almonds. serve warm.
