Number of Servings: 12

Ingredients

    1 Cup white sugar
    1/3 cup softened butter
    2 eggs
    3 ripe bananas
    2 cups flour
    1 tsp baking soda
    1 tsp baking powder
    1 tsp vanilla

Tips

I love making muffins or mini muffins - be sure to adjust baking time. Mini muffins and regular muffins will take around 20 minutes, and a loaf about 45 minutes. Be sure to check with a tooth pick - if it come out clean, the banana bread is done.


Directions

Mix Sugar, soft butter and eggs and beat for a little bit to melt the sugar. Add bananas and vanilla and mix in. Mix baking powder and soda into the flour and then add to wet ingredients until just combined. Mixing too long will make the banana bread get chewy.

Serving Size: Makes about 12 regular muffins, 24 mini muffins, or 1 loaf cut into 12 slices.
