Tomato Beef Curry

Number of Servings: 4

Ingredients

    1 pound Ground Turkey (or lean ground beef)
    2 Tbsp Olive Oil
    1 large onion, chopped
    4 Tsp Minced Garlic
    4 cups Broccoli Florets
    2 Whole Carrots
    2 Tbsp Curry Powder
    2 Tbsp Tumeric
    28 Oz Tomatoes, No salt added
    1 1/2 cups Couscous, cooked
    6 Tbsp cider vinegar
    4 Tsp dill

Directions

Brown the onions and garlic. Shred the carrot. Brown the meat in onions and garlic. Add carrot and saute until tender. Add the curry powder and cook for 2 minutes. Stir in the tomatoes, vinegar and dill. Cook and stir continuously until all the juices are removed from the bottom of the pan.
