4 cups cooked pasta, cooled
1 large chopped tomato
1 Cup chopped cucumber with peel
1 Cup chopped fresh mushrooms
1/2 Cup chopped red onion
2 slices cooked turkey bacon, crumbled
2 Tbs olive oil
1 Tbs red wine or balsamic vinegar
4 oz. shredded part skin mozzarella cheese
I serve this as a cold salad. When draining the pasta I run it under cold water to chill it down if I am serving it right away.
Serving Size: Makes approximately 8 1-cup servings
