Smothered Pork Chops

Introduction

Number of Servings: 4

Ingredients

    4 Boneless Pork Chopped with Fat Trimmed
    1 cup Flour
    1 Tbsp Salt
    2 Tsps Black Pepper
    3-4 Tbsp Oil
    1 Large Onion (thinly sliced)
    2-3 Cloves Garlic (minced)
    2 Cups Water
    Salt and Pepper to Taste

Directions

Lightly season the pork chops with salt and pepper. Mix the 1 Tbsp salt and 2 tsps pepper with the flour on a plate. Dredge each pork chop in the flour on both sides, shake off extra and set aside. Save the flour.

Heat the oil in a large skillet over medium-high flame. Brown the pork chops on both sides and set aside.

Add more oil to the skillet if necessary, reduce heat to medium and add the sliced onions. Saute, stirring frequently, until the onions are cooked down and beginning to brown, 10-20 minutes.

Sprinkle about 1/4 cup of the saved flour over the onions, stir in well and cook through 1-2 minutes. Whisk in the stock or water and bring to a boil to thicken. Reduce heat to medium low and season with salt and pepper to taste. Add a little more stock or water if needed. Press the pork chops down into the simmering sauce, cover and simmer for 10-15 minutes. Serve with hot rice, grits or mashed potatoes.
