Medeterranian Chicken Pasta

Introduction

Veggie and Chicken pasta with feta Veggie and Chicken pasta with feta
Number of Servings: 8

Ingredients

    2 chicken breasts
    1 bell pepper
    4 large mushrooms
    12 cloves of garlic
    3 cups of broccoli
    1 can of black olives
    1 package of frozen spinach
    1 package of whole wheat pasta
    6 Tbsp Italian dressing
    4 tbsp Olive Oil (2 for cooking and 2 for dressing)
    10 tsp Parmesan cheese
    1 cup crumbled feta cheese

Directions

chop all veggies and steam broccoli. Microwave spinach and wring out before adding into dish.

Saute mushrooms, garlic and peppers adding salt and pepper to taste.

Cut up chicken and toss with dressing. cook in a large pan until done.

Cook pasta according to package directions.

Toss all the pasta with the sauteed veggies, steamed broccoli and spinach, then add the olive oil, feta and Parmesan cheese for dressing.

Serving Size: makes about 8 servings
