Chick Pea Salad

Introduction

Number of Servings: 8

Ingredients

    2 cans chick peas (I used trader joes)
    two stalks celery chopped small
    One large red sweet pepper
    Small bunch of cilantro - destemmed and chopped
    Juice from a small lime
    Salt to taste

Directions

Chop celery and pepper into small pea-sized peices
mince or finely chop cilantro
rinse 2 (15 oz) cans of Chick peas
Mix in a bowl with 1.5 tbs of olive oil (extra virgin)
Add a twist of lime and salt to taste.
I like to chill it sometimes to let the flavors blend.
