On Hand Ingredient Spaghetti

Introduction

Ingredients

    Canned Tomatoes, 400 grams
    Cherry Tomatoes, Fresh, 1 Tomato, 10 serving
    Black Olives, 4 jumbo
    Onions, raw, 1 cup, chopped
    *Spinach, cooked, 1 cup
    *Artichoke hearts, grilled, 0.3 cup
    Granulated Sugar, .5 tsp
    Basil, 1 tbsp
    *Chili pepper, red, dried, 6 grams = 2 tsp., 2 tsp
    Salt, 1 tbsp
    Broccoli, cooked, 2 cup, chopped
    Spaghetti, cooked (pasta), 1.5 cup
    Garlic, 3 cloves
    Olive Oil, 4 tbsp
    Pumpkin Seeds, .4 oz (85 seeds)

Directions

sautee onions, cherry tomatoes until onions are translucent.
Add spinach & wilt.
Once spinach is wilted, remove.
Place one can of tomatoes into the pan, season with basil, thyme, chopped garlic, red chili flakes. Add olives & artichoke hearts. Add a pinch of sugar to the canned tomato mixture.
Add 1/2 can of water to tomato mixture.
Simmer for 30 minutes on medium to low heat.
Place spaghetti to boil in salted water.
After tomatoes have simmered for 30 minutes, add spinach, onion & cherry tomatoes. Turn off heat & cover for 10 minutes.
Steam broccoli on top of pasta.

MIx spaghetti & tomato mixture. Serve with chopped pumkin seeds.
