Orange-Pistachio Brown/Wild Rice Salad

Introduction

This is a modified version of dietitician Ellie Krieger. Orig. recipe uses 2/3 c. of each individual rice, 1 orange. The salad dressing uses 1/4 t. of salt and honey. Ingredients

    1 c. HEB Brown & Wild Rice Blend, 1 cup
    2-1/2 c. Chicken broth, C Market Organics, ff, low sodium
    1 c. Fruit, mandarin orange sections; Great Value
    1/4 c. Red onion
    1/4 c. Wonderful Pistachios; roasted, no salt
    1 t. orange zest

    Salad Dressing:
    1/4 c. Olive Oil
    1/8 c. GV Orange Juice
    1 tsp. Mustard, dijon; Kroger Private Selection
    1/2 T. Honey (or any other sweetner; can sweeten to taste)
    1/3 c. of red wine vinegar

Tips

My modification also included the added of Craisins. The next time I make this dish I will reduce the amount of red onions. Otherwise, I liked Ms. Krieger's recipe and it was change from ordinary brown rice recipes.


Directions

Cook rice according to your package. [One cup of HEB blend cooks for 35 minutes]. Remove from heat and let cool completely. When the rice is cool add the orange sections, the fresh basil leaves, red onion, pistachios and 1 t. of orange zest to the rice. Mix to incorporate.

In a separate bowl, whisk together the red wine vinegar, oil, orange juice, mustard, honey or other sweetner. Pour mixture over rice and toss.

Dish can be eaten at room temperature or straight from the refridgerator.
