8 cups water
1 pound of chicken tenders, cut into bite sized pieces
1 can of HEB Mexican flavored, diced tomatoes
1 package of Mann's vegetable medley
1 cup of brown rice
2 Tbsp of Fiesta fideo ole seasoning
1 cup of green onions
This can be served with a salad for veggie laden meal!
You can leave the chicken out and substitute with tofu to make the soup vegetarian.
Add the next 5 ingredients.
Bring down to a simmer and cook for 35 - 45 minutes
serve with green onions as a garnish.
