Rachel Ray's Moroccan Chicken

Introduction

One of her 30 minute meals. She made with Butter Nut couscous. Since this is too high in fat & calories, I've omitted from the nutritional information. I serve with plain couscous that I made with the chicken broth minus the nuts. The instructions have her version... I'll modify more for an even healthier choice. One of her 30 minute meals. Ingredients

    Olive Oil, 3 tbsp
    Chicken Breast,pieces, no skin, 8 ounces
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Onions, raw, 1 cup, sliced
    Carrots, raw, 1.5 cup, sliced
    Garlic, 2 cloves, grated
    Paprika, 1 tbsp
    Curry powder, 1 tbsp
    *Coriander seed, 1 tbsp
    Cinnamon, ground, 2 tsp
    Olives (black and/or green), coursely chopped, .5 c
    Apricots, dried, .5 cup, chopped
    Cranberries, dried, sweetened (craisins), .33c
    Chicken Broth or Bouillon, 2.5 cup
    Lemon juice, .5 cup
    ----------------------------
    Butter, salted, 3 tbsp
    Almonds, .66 cup, slivered
    *Pine Nuts, .33 cup
    Chicken Broth, 1.5 cup
    Couscous, 1.5 cup, dry


Directions

Chick - Brown chicken pieces in EVOO, s & p. Add sliced onions, carrots, grated garlic. Add "smoky" paprika, "smoky" curry, coriander & cinnamon.

Couscous - Melt butter - toast nuts.

Chicken - add chopped fruit, olives & lemon zest

Couscous - add chicken broth, 1.5 cup. Bring to simmer.

Chicken - add chicken broth, 2.5 cup.
Allow mixture to cook down. Fruit will absorb broth and mixture will thicken up.

Couscous - add 1.5 c couscous. Simmer 5 minutes, then fluff with fork.

Chicken - add lemon juice, mix & serve in bowl with couscous on top.

  • I made this with whole wheat couscous and simply one tablespoon of margarine, and 1 tsp of salt. I cut the sodium content by using homemade stock - a delicious treat, I'd cook it again, happily! - 1/27/08

  • By looking at the ingredient list, I see that most of the sodium content comes from the store-bought boullion or broth. An easy way to reduce the sodium is to use homemade or low-sodium stock. You could use apple juice for cous-cous, or even plain water, though your final dish won't be a flavo - 1/14/08

  • almost 2400 mg of sodium in one serving is way over most of our limits for the day, it looks delish! I wonder if someone will make it and convert it to be more sodium friendly :) - 1/14/08
