chicken casarole

Number of Servings: 6

Ingredients

    2 chicken breast, diced
    1/2 lg onion, diced
    1 tsp chopped garlic
    2 carrots, diced
    1 head broccoli, chopped
    225 sliced mushrooms
    2 cans cream of mushroom soup
    1 cup chicken stock (or boullion)
    2 cups rotini pasta (uncooked)

Tips

you can use spices on the chicken while it is cooking such as herbs de province, thyme, rosemary, salt, pepper etc


Directions

- preheat oven to 350
-boil pasta, cook al dente (or else it will be mushy later)
- sautee diced chicken with garlic and onion in a large pan
- onced chicken is cooked, add veggies and sautee for a few minutes
- add chicken stock and cook a few minutes longer
- mix in soup
- put drained pasta into bottom of casarole dish, top with chicken & veggie mixture and mix it all up.
-bake casarole in oven for 20-30 minutes until bubbly

Serving Size: makes 6 1-cup servings
