Introduction

Leftover or deli corned beef with fresh veggies, quick and easy. Leftover or deli corned beef with fresh veggies, quick and easy.
Number of Servings: 4

Ingredients

    *Corned Beef, Lean and Sliced, 8 oz
    *Leek, fresh (1 stalk
    *fresh onion, 0.5 cup
    *Celery - fresh 1 stalk (5" = 17g)
    *Carrot (fresh), 1
    Cabbage, fresh, 1 cup, chopped
    *Purple Potato (1srv = 3 potatoes)
    Garlic, 2 tsp (remove)
    *Better than Boullion Chicken Base, 2 tsp
    Water, tap, 5 cup

Directions

Dice all veggies while heating water in kettle. Saute in hot nonstick-sprayed pan all of the chopped veggies except cabbage. When soft, add water, cabbage, garlic, chicken base/ powder and corned beef. Simmer for 10-15 more minutes. Serve with bread and Guiness!

Serving Size: about 2 cups each, 4 big servings
