Debs Healthy Oatmeal Pancakes with Chobani Blueberry Greek Yogurt

Introduction

Gluten Free. Use 2/3 cup cooked steel cut oat. Gluten Free. Use 2/3 cup cooked steel cut oat.

Ingredients

    oat flour, 1 cup
    Baking Powder, 2 tsp
    2/3 cup cooked steel cut oats
    Egg substitute, liquid (Egg Beaters), .5 cup OR (1 egg and 2 egg whites)
    Milk, 2%, .5 cup
    Salt, .5 tsp
    Baking Soda, .25 tsp
    Greek yogurt, Chobani blueberry non-fat, 6 oz
    Coconut Oil, 2 tbsp
    Stevita Stevia, 2 tsp
    Blueberries, 1 cup

Tips

Make a batched of cooked steel cut oat ahead of time. Use 2/3 cup in this recipe and enjoy the rest heated for breakfast 2/3 cup at a time.


Directions

Serving Size: makes 14 1/4 cup pancakes - have 2 or 3, they are so low in calorie but exploding with taste

Sift dry ingredients together, beat eggs and liquid ingredients, combine by gently mixing except blueberrirs. Sprinke blueberries on pancake batter as you fry them.
