Colcannon - Vegan

Introduction

For a finger food treat similar to "tater tots", divide mixture into 24 balls and bake on a parchment lined baking sheet at 400 F for about 20 minutes. For a finger food treat similar to "tater tots", divide mixture into 24 balls and bake on a parchment lined baking sheet at 400 F for about 20 minutes.
Number of Servings: 6

Ingredients

    2 lbs red potatoes
    6-8 oz fresh kale
    2 Tbsp nutritional yeast (optional)
    2 Tbsp corn starch or potato starch
    1/2 tsp ground thyme
    1/2 tsp garlic powder (or 2 large cloves fresh garlic, minced)
    2 Tbsp non-dairy milk (almond, soy, rice)
    Salt & Pepper to taste

Directions

Chop potatoes to less than 1" cubes. Place in large pot, cover with water and boil until tender.

Meanwhile, remove and discard stalks from the kale. Chop kale into large pieces.

When potatoes are done, remove from water with slotted spoon and place into a large mixing bowl. Place kale into potatoe water and cook until tender, about 6 or 7 minutes.

Remove kale from water and place into a food processor with about 2 or 3 Tbsp of the water. Process until chopped fine. Add to potatoes.

Add remaining ingredients and mash thoroughly. Serve as is or proceed to next step for Colcannon Puffs.

For Colcannon Puffs, divide mashed mixture into 24 equal sized balls onto a parchment lined baking sheet. Bake at 400 F for about 20 minutes or until slightly browned.
