Seared Scallops with Citrus Herb Sauce

Ingredients

    For Scallops
    lb. Sea Callops
    tsp kosher salt
    1/8 tsp paprika
    3 tbsp unsalted butter

    For Herb Sauce

    1 garlic clove, minced
    3 tbsp dry sherry
    1 tbsp lemon juice
    1/8 tsp minced fresh oregano
    1/8 tsp fresh minced tarragon
    2 tbsp unsalted butter



Tips

This goes really well with the Mushroom and Butternut Squash Risotto.

I usually prepare the sauce before the scallops and try to time the scallops being finished with the sauce.


Directions

1. Rinse and pat scallops dry. Sprinkle with salt, pepper and paprika. In a large skillet, heat 3 tbsp of butter over medium-high heat. Add scallops; sear for 3-4 minutes on each side or until golden brown; and firm and tender. Remove from skillet and keep warm.

2. Wipe skillet clean. Saute garlic in 2 tbsp butter until tender; stir in sherry. Cook until liquid is almost evaporated; Stir in the remaining ingredents. Serve over the scallops.

Serving Size: approximately 3 scallops per serving
