Awesome Fresh Low-Sodium Gazpacho

    3 medium tomatoes, peeled and chopped
    1/2 cup cucumber, seeded and chopped
    1/2 cup green pepper, chopped
    2 green onions, sliced
    2 cups low-sodium vegetable juice cocktail
    1 tablespoon lemon juice
    1/2 teaspoon basil, dried
    1/4 teaspoon hot pepper sauce
    1 clove garlic, minced


1. In a large mixing bowl, combine all ingredients.
2. Cover and chill in the refrigerator for several hours.

Yield: 4 servings
Serving size: 1 1/4 cups

  • Made this today with my immersion blender. Added fresh jalape˝o and lots of pepper for more heat. Love that it is all fresh tomato and no canned. The lemon juice added the brightness without salt. Had a serving right away because it smelled so good but know it will taste better when chilled. Great! - 8/22/15
